Lemon Grass & Kaffir Lime Leaf Soy Dazzler

600 g soy vege chicken (1 pack)
5 stalks lemon grass
1 cup kaffir lime
1 cup raw cashew nuts
1 pinch of pepper
3 tbsp vegetarian oyster sauce
2 tbsp lemon juice (from 1⁄2 lemon)
1⁄2 cup parsley


• Peel away the outer skin of the lemon grass, then press the stem with the flat side of a knife to soften it then finely chop
• Finely slice the kaffir lime

• Add two tablespoons of oil to the pan and fry the soy veg chicken in low heat for about 10-15 minutes until brown then set aside
• Add lemon grass, cashew nuts and kaffir lime into the pan and fry for about 7 minutes until brown
• Add the fried soy veg chicken, vegetarian oyster sauce, pepper and lemon juice onto the pan and mix them well then turn off the heat
• Add the parsley and toss through.
